Barley delight

What you need: 

- 3 cups of barley

- 2-4 cups of various mushrooms

- 1 big pack of dried seaweeds (nori)

- crushed nuts

- 3-4 leaves of chard or kale cut in small rectangles

- lemon juice

- 1 pack of cherry tomatoes

 

- Tamari for more flavor (optional) 

What you do: 

- cook the barley as directed on the package and add the chard or kale, meanwhile cook the mushrooms on medium heat (with 1/2 cup of white wine, 1/2-1 cup of tamari, 1/2-1 cup margarine, onions, garlic, herbs for over 40 minutes) 

- meanwhile crush almonds, cashew, or whatever nuts you want (finely)

- cut your cherry tomatoes in halves

- once the barley is cooked add the tomatoes, crushed nuts, and add the dried  seaweed, add lemon juice and the Tamari (if needed) , the already cooked mushrooms and mix together......
