Beans and Greens

What you need: 

1/2 thick slice of purple cabbage, chopped
2 large kale leaves, chopped
2 large chard leaves, chopped
4 cloves garlic
1/2-3/4 cup fresh fava or soy beans
3 tablespoons hemp or flax oil
2 teaspoons soy sauce
fresh lemon juice to taste
fresh ground pepper (optional)
herbamare season salt to taste (optional)

What you do: 

Peel garlic and lightly smash with the side of your knife (just enough to open the clove) and place this on the bottom of your steamer basket. Slice equal amounts of greens to desired amount and place in steamer along with beans and steam for 6-10 minutes until veggies are cooked, but crisp (not mushy).
Take garlic out first and mash with a fork on your plate. Top with beans and greens and mix to evenly distribute the garlic. Top with hemp oil, soy sauce and lemon to taste. Mix all together on your plate.
Serve with a side of quinoa, millet or on its own.
** I never measure the liquids just a squirt of each until I like the balance of salty and tangy (I estimated amounts above). Also, this works with any beans, fresh or canned. I just find the fresh green fava beans make this dish come alive!
