Beans and Rice: The BEST RECIPE

What you need: 

1 can of organic black beans (Eden, Shari Anns,etc.)
1 small onion
half of red or green pepper (whichever you prefer) (or a little of each)
half of a small (8 oz) can of Hunts Tomato sauce (Hunts is vegan)
olive oil
salt and pepper

What you do: 

1. Cut up the onion into small pieces, along with the pepper.
2. Saute in a small-medium sized pot, with some olive oil you can just drizzle enough on the onion and pepper to cover, or you can measure out in tablespoons, its according to how much oil you want to use)
3. Add at least 1/4 of salt ( I use sea salt) or more
4. Add pepper (I usually just use a pepper shaker and shake it about 10 times, sometimes more) Saute on low heat until veggies are soft
5. Add half a can of tomato sauce, followed by can of black beans. Let it come to a quick boil, then reduce heat to low or simmer. The longer you let it simmer, the more flavorful the dish. Stir occasionally.
*You can use any kind of beans, I just prefer black beans Serve with rice. Enjoy.
*This is a simple dish. You can adjust any of the ingredients according to taste!

SO HOW'D IT GO?

Wow. This was fantastic. I'm a vegan on a budget and very new to vegweb - I've never cooked anything with beans before. I'm tellin' ya, this is going to become a normal one for me. It was so cheap, and I had enough left over for lunch the next day. Great job!

This truly is great.  Fridays are vegetarian in my house and I'm always in here finding something new.  This certainly fit the bill.  Very easy and quick.  I added 1/2 t. each of chili powder and cumin.  Also used kidney beans.  Just really good.

This is a really cool recipe! I´ve been making this a couple of times now, and I cannot get enough of it.
Even though I suggest not to take the black beans from the can, to rather take black beans and soak them overnight. This tastes  more better even!  :>

This recipe is so delicious! It's cheap and easy to make and you can easily add different spices to it.  I added a good amount of crushed red pepper, chili powder and a pinch of cumin to mine

Quick and delicious!  I highly recommend adding LOTS of Tabasco Garlic sauce to it.  It's as though the tabasco and this dish were made for eachother.  Very good.  5 stars.

So good--this is my favorite type of post-workout recipe: carb-y comfort food.

My goal was to do this as a lunch rather than as a side dish, so my variations did make it a little more like chili. I used the entire can of sauce to make it a little more... well, saucy. (I used from-dried beans so I figured I could afford the sodium!). I added a little cumin, a little more chili powder, and a just a shake or two of crushed red pepper. Also my beans were a little dried out so I added a splash of veggie broth as I cooked everything together.

A good "blank slate" recipe--good on its own or for turning into something a little different by adding some extra stuff to it. (Even if you don't do the cumin and chil powderi, I'd recommend adding at least a little heat to it with something hot-peppery.)

The first time I made this I used a 6oz can of tomato paste and a little water since I didn't have sauce and mixed it with 1cup of rice.  I liked it alot, it had a strong tomato flavor and color which I liked, I had it as a main dish and it was very filling.  The second time I made it I used tomato sauce but didn't like it as much, not enough flavor for me.  Next time I'll use the paste again.
