Beans and Rice for Lazies

What you need: 

1 clove garlic, diced
1/2 medium onion, chopped
oil, as needed
1 can (15 1/4 ounce) beans, drained and rinsed (my favorite is black)
1 can (14 1/2 ounce) diced tomatoes, undrained
1 teaspoon cumin
2 cups brown rice, prepared (about 1/2 cup uncooked)
salt and pepper, to taste

What you do: 

1. Prepare brown rice before starting beans, according to package directions. Brown rice takes about 45 minutes.
2. Saute garlic and onion in a pot with heated oil until onions are translucent. Careful not to burn the garlic.
3. Turn down heat, add beans, as well as the entire can of tomatoes including juice. Add cumin.
4. Simmer on low-medium heat, stirring occasionally. The way I like them takes about 20-25 minutes to be kind of mushy together.
5. Serve whenever they are your desired consistency. Serve over a bed of brown rice and season with salt and pepper.

SO HOW'D IT GO?

I added grated carrot because I have a huge bag that I have to go through, and I added some thyme instead of cumin because that's all I had. It was very tasty! I will make this again.

Thanks for the great recipe. It's very versatile, quick, and easy. I used black japonica rice, black beans, doubled the amount of cumin and onion, and went with 3 cloves of garlic (I love the stuff), and it turned out really well.

Very yummy! I used pinto beans and added chili powder too. My 2 1/2 year old loved it in a wrap. (So did I!)

This was a great and easy recipe.  I used stewed Italian tomatoes instead of diced and 1 tablespoon if cumin.  This is a new staple in my house, thanks for the great recipe!

I just made this for my family tonight with the italian stewed tomatoes which made it delicious. Also, before adding the beans, I added chopped up zucchini, which helped take away the dominant tomato flavore. This was so nummy that my mom and younger sister ate it up (which is unusual if I start out the dinner saying where I got the recipe... they for some reason are afraid of anything vegan)

this was a very easy dish , however we'd like to find a way for the tomatoes not to be so dominant. overall it was yummy.
