Beef-less Beef and Potatoes
1/2 organic bell pepper, diced
1/2 organic tomato, chopped
1 large organic potato, thinly cut
1 cup veggie beef crumbles (I like Smart Ground brand)
2-1/2 teaspoons olive oil
1. Pour olive oil into a saute pan. Place potatoes in pan. Cover with lid and saute on low-medium, checking in 5-7 minutes, stirring ocassionally. Add ground beef and cook for two minutes. Add bell peppers and tomotes and cook for three more minutes.
