Beer Batter Potatoes

What you need:

4 medium baking potatoes
vegetable oil, as needed
1 cup all purpose flour
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1/4 cup nondairy milk (I use soy)
1 tablespoon vegetable oil
3/4 teaspoon salt
1/2 cup beer

What you do:

1. Preheat oven to 400 degrees F. Rub potatoes with oil. Bake for 1 hour or until done.
2. Combine next 5 ingredients, beating well. Stir in beer. Set aside. Heat oil to 375 degrees F, for frying.
3. Cut potatoes lengthwise into 4 wedges. Dip wedges in batter, and deep fry in hot oil until golden brown. Be careful because the potatoes like to stick together! Drain on paper towels.
Source of recipe: My uncle made this one time and it was really good, and I don't like beer. The alcohol is, of course, burned off while cooking.'
