Beet and Apple Salad

What you need: 

1 bunch beets
3 tablespoons olive oil
2 green apples, sliced
1 tablespoon Dijon style mustard

What you do: 

1. Preheat oven to 350 degrees F. Remove the beet greens, wash and quarter or cut the beets in half (depending on size).
2. Toss beets in oil and place in a baking dish. Bake for approximately 30 minutes or until beets are tender. Remove and let cool.
3. Mix beets, apples and mustard together.
Can be served cool or warm and is delicious the next day.

SO HOW'D IT GO?

I had 2 large beets so I cut them in half and pressure cooked for about 10 minutes (with 1/4 C water) and let them cool off in the cooker while I sliced the apples and micro-planed some frozen ginger. Running the beets under cold water, I slid off the skins and cubed them as oktokrewl recommended. I added some (1-1.5 Tbs) walnut oil. Just perfect!

so simple and delicious.. I doubled the recipe and also added about a tablespoon of grated fresh ginger and fresh ground black pepper. I also cubed the beets into about 1" - 1.5" pieces before baking them. Thanks for one of the best beet dishes I've ever had!
