Beet and Potato Pancakes

What you need: 

1 cup whole wheat flour
1/2 cup water
1 large beet, grated
2 large potatoes, grated
1 onion, grated or chopped finely
salt and pepper, to taste

What you do: 

1. Mix whole wheat flour and water. Add remaining ingredients, and mix well.
2. Heat oil over medium-high heat in a large pan. Form beet/potato mixture into pancakes with your hands (they will hold together when cooked).
3. Fry, flipping often, over medium-high heat for about 5 minutes.
Serve with salsa and sour supreme, syrup, or whatever you'd normally top potato pancakes with.

@craftthefuture - I'm making these for dinner tonight with "sausage" patties and shiitake mushroom gravy.  Maybe lima beans on the side.

Thanks for this recipe, jessigurr. I made these with black bean burgers tonight. Very nice! My mods: I dropped the beet (half the point of the recipe, I know...), although I am looking forward to trying them when I have a beet. I also halfed this because I was eating for 1, and still made 5 huge cakes. I used white, unbleached flour. I thought this was going to be too much onion, but I went with it as published and it worked - nice hush puppy type flavor, well blended. I added dashes of cumin, cayenne, paprika and mequite liquid smoke. Also, I halfed the water (so quartered it), because I thought it would be soupy - i dont cook with flour much - but I wish I had added all the water, since they turned out a little dense. Lastly, I added a quarter cup of corn meal, which added a nice crunchy crust I think. Spinkled cayenne sauce on top. Sweet!

I'd like to make this on Tuesday but don't know what to put it with for protein. Any quick and yummy ideas???

How about adding some nutritional yeast? It will add protein, Vit. B12, and a nice cheesy favor.

Pretty dang good, they were very dense though and this makes a lot! I served this some tofu benedict english-muffin sandwiches for a lazy breakfast.

Craftthefuture: I realize your post was quite awhile ago... hope this still helps.

I think I would serve this with scrambled tofu and/or soy sausage to add some protein... but if you don't want to make the extra dish and just want to incorporate protein into the potato pancakes... I'd say try adding some soy protein powder. I do this a lot when I need to add protein but don't have anything naturally protein-containing on hand.

Holy cramoley, these are really good!  Definitely don't skimp on the onion, once they get fried and a bit crispy, the onion adds the perfect taste.  We served them over spaghetti with margarine and adzuki beans with garlic and onion powder(from the night before), and it was soooo nice.  One of the best things I think I've ever eaten, and it was super easy to make!
