The Best Banana Muffins Ever

What you need: 

2 tablespoons vegan margarine
2 heaping tablespoons sugar
1/2 teaspoon vanilla
2 very large ripe bananas, mashed
1/2 cup all-purpose flour
1/2 cup dry oats
1 heaping teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
pinch salt
walnuts or carob chips, optional

What you do: 

1. Preheat oven to 375 degrees F.
2. Put the butter and sugar in a pan over low heat to melt. Remove from heat and stir in vanilla.
3. In a bowl, combine the butter-sugar mixture, bananas, flour, oats, baking powder, baking soda, cinnamon, and salt. Don't over mix, just stir a couple of times; you will have a not terribly attractive lumpy sludge, but don't worry about it.
4. Fill the muffin trays about two-thirds full of mixture. Bake for 25 minutes. Leave in pan for 5 minutes, then remove to wire rack for another 5 to 10 minutes, or until cool.

These are soooooooo delicious! Mine came out super moist, and that has never happened with anything banana related I've made so far. I threw in an extra banana and some raisins to boost the sweetness. My Dad gobbled them up so quickly!

I substitued white rice flour sifted ,and they didn't rise very well.  but that is okay.  They taste fabulous! 


these are so GOOD! i had an orange this morning and decided that the zest from the orange would be good in these and i was right they are awsome! the only question you should have about these muffins is to chocolate chip or not to chocolate chip THANKS so much for the great recipe! :)>>>


Really good and quick to make.  I used three smaller sized bananas and added chopped walnuts.  I like the chewy texture more than some most muffins can offer and they really fill you up.  I ended up with four BIG muffins and I could hardly get through one.  Thank you for a great recipe!


These were great! Amazing with chocolate chips. However, it did only make 6 pretty small muffins, so I would probably double it next time.


We had a bunch of bananas going bad at work (I work in a health food store), so I took them home to make muffins. I found this recipe, and decided to give it a try. I used unsweetened carob chips, and added about 1/4 cup of shredded unsweetened coconut. The muffins came out moist and soft, and are still that way a week later. Even my non-vegan boyfriend gobbled them down (he's picky about my vegan food), and they were a huge hit at work! I'll definately be making these again.


these muffins are so delicious. i added a heaping tablespoon of creamy peanut butter and it made them so moist and yummy. i will definitely make these again.


These did not turn out for me! They didnt look like the ones in the photos! : ( The mixture made 6 small muffins and they were kinda squishy almost like they had too much banana and not enough flour or something. And I could taste the baking powder....they were just ok for me :(


Omg! this muffings turned out amazing!...
i did a small change: the batter was kinda dry and stiky at first so i incorporated half cup of vanilla soy milk = amazing  :)>>>

used brown sugar instead of white
and like i had no oats i took 2 nutricional oats bars and put them in the food processor, lol, they turned just the right way =)


I really liked these. I also subbed canola oil, used only 2 scant tablespoons of brown sugar, used whole wheat flour, and added walnuts. I have a sweet tooth, and was amazed that these tasted so sweet even though I used so little sugar. I don't even like oats generally, but the texture was great. Will definitely be making these again. One batch made 6 regular sized muffins and 6 mini ones for me.  ;)b
