The Best Breakfast Scramble Ever!

What you need: 

Cheez sauce:
1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon garlic powder
2 cups water
1 teaspoon yellow mustard
4 tablespoons vegan margarine (I use Earth Balance) Stir fry:
1/2 onion, chopped
1/2 green pepper, chopped
cooking oil, as needed
1 pound extra firm tofu, drained and crumbled (not silken style)
pinch turmeric, optional
salt and pepper, to taste

What you do: 

1. For cheez sauce, mix first 3 ingredients together in sauce pan. Add water and mix thoroughly. Heat on medium until thick and bubbly. Remove from heat and add mustard and margarine. Set aside.
2. For stir fry, saute onion and green pepper in oil. When they are good and soft, move them to the sides of the pan and form an empty circle in the middle for your tofu.
3. Add more oil to the middle of the pan, then add your drained, crumbled tofu. When it starts to get golden, mix in the peppers and onion and keep frying. You can add some turmeric for color, if you like.
4. When it looks like you could eat it, add the cheez sauce and mix it all in to coat, until that becomes golden brown too. I saute this for another couple of minutes. You might not need all of the sauce. I save the leftovers for pizza or nachos. Add salt and pepper to taste (this makes all the difference!).
Eat! This is soooo good and it’s great on toast or English muffins (I use Matthew's brand). I don't miss eggs at all after discovering this!

This recipe was GREAT I def agree that there is ALOOOT of cheeze sauce! and I used Amy's Breakfast scramble instead of making my own and it was soooo yummy  :D

;D  YUMMY YUMMY YUMMY!!! I AM TOTALLY DIGGING THIS CHEESE SAUCE! I ADDED SOME TOMATO AND VEGAN CHEESE TO THE SAUCE...I SAVED SOME TO BRING TO MY MEAT-EATING FRIENDS. WE'LL SEE HOW IT GOES OVER!! THANKS A MILLION!

This was great.  I made it for a lazy rainy day lunch for me and my carnivorous sweetheart.  I didn't have any peppers, but I added spinach for color contrast and yum factor.  She was totally surprised by how "eggy" it was.  Next time I think I will add some avocado and tomatoes at the end.

This is my second review of this, and let me just say this:  I'm pretty sure I could live on this recipe and a couple of variations on it.  I just got done doing up a batch with some "breakfast sausage" instead of the tofu and turmeric, and I also added in some potatoes and sliced mushrooms - I think I'm in heaven.  I want to have the leftovers for breakfast tomorrow but I'm not sure they'll last that long!  :D

This was amazing.......I must admit, 3 weeks into being vegan, the nutrional yeast cheese sauce made me nervous.  But it was wonderful.  I put in extra garlic, some onion powder, a few shakes of tabasco and salt and pepper. 

I had a few slices of "ham", and Elli put tomatoes on hers.  I am still stuck a bit in the rut of eating my "eggs" just like I would have before.

Yet another meal in which I am further inspired and excited to be vegan, where I breathe a tiny sigh of relief because there is a much more than acceptable substitute for something I love.

I finally made this and it was super good. The cheezy sauce kind of coagulated on me so when I added it to the scramble mixture, I added a little veg broth and it smoothed out. Very good. I ended up eating the entire thing myself! haha

I made this for a brunch where I was the only veg*n.  It was a huge hit!  Zero leftovers and some of the pickiest eaters there when back for seconds!

made this as a nice saturday brunch for myself, boyfriend, and roommate. they thought it was quite delicious. i think it would have been really good as a burrito or sandwich. i halved the sauce and still thought it ended up a little too runny, but it was tasty and very filling. i served it up with fried potatoes.
