Best Cookies Ever: Oatmeal Pumpkin Goody Cookies

What you need: 

1/2 cup vegan margarine (I use Earth Balance)
2/3 cup granulated sugar
1/4 cup maple syrup
1 teaspoon molasses
1 cup pumpkin puree
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 teaspoon cloves
1/2 teaspoon ginger
1/4 teaspoon nutmeg
2 cups oats
1/2 cup chocolate chips
1/3 cup raisins
1/3 cup cranberries
1/2 cup chopped walnuts

What you do: 

1. Preheat oven to 350 F.
2. In a medium bowl, cream together margarine and sugar until fluffy. Stir in maple syrup, molasses, and pumpkin puree.
3. In a separate large bowl, sift together flour, baking powder, baking soda, salt, and spices (cinnamon cloves, ginger, and nutmeg).
4. Fold pumpkin mixture into flour mixture. Stir in oats, chocolate chips, raisins, cranberries, and walnuts.
5. Place rounded spoonfuls onto cookie sheets and bake for 12 minutes. After you've taken them out of the oven, let the cookies cool on the sheet for a couple minutes and then transfer to a cooling rack.

Super good! hey do not rise. However you put them on the cookie sheet is how they come out of the oven. I suggest that you shape them a bit and flatten them out a bit.


Tried today for my family reunion get together. I loved them. I did however drop the molasses i get too much heat from my family regarding molasses. I loved them. They are soft chewy and the cranberries and raisins make them extra sweet. Nice spices not overpowering. I will definitely make these again. Thank you for posting this recipe!
