Best Tasting Pancakes Ever! Vegan or Otherwise

What you need: 

1 teaspoon vanilla
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1 cup nondairy milk (I use soy)
2 tablespoons vegetable oil
1 cup white all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar

What you do: 

1. Mix wet ingredients in a medium sized bowl. Mix dry ingredients in a larger bowl.
2. Pour wet ingredients into dry; mix well until smooth consistency.
3. Drop ladlesful onto medium heat (preheated) pan. Flip over when each pancake begins to bubble on top.
Serve with vegan buttery spread (if desired) and maple syrup.'

This name didn't lie!  These were fabulous.  I followed the recipe exactly, but added some blueberries to the mix.  So good and so easy.  This will become a staple in my house!

Add the oil to the entire batter...I don't use oil in the pan, I used a non-stick skillet or I use PAM spray.  I don't like to add more oil than necessary...

I'm so glad that I posted this recipe...I haven't been back until now and it's so wonderful to see all these great comments!  I make this recipe often, and always do it exactly as I've written (using Ener-G egg replacer), but with all the feedback I've received I'm definitely going to try mixing it up a bit.

do i add the oil in the dough or just in the pan for frying them? thanks so far!!!

Absolutely wonderful.  I used banana for the egg, added more sliced bananas ( had some bananas to get rid of) and peanut better for the oil and also added a dash of cinnamon. Fantastic.  Can't wait to try these out on my non vegan family members!

These pancakes were delicious and so easy!  I made them with a banana for the egg replacer and almond milk instead of soy milk and a little cinnamon.  Oh so good!!

;)b Best pancakes I've ever made. I followed the recipe exactly and used Ener-G egg replacer. Now I know what "fluffy" pancakes taste like. They were fluffy and thick, and it made about 4 average-sized pancakes. I will definitely make these again.

Wow!  I've made vegan pancakes before but they turned out a little tough and heavy.  This recipe, however, is perfect.  They're so much better than any pancakes; vegan or otherwise.

I cut the recipe in half since it was just for me.  I used a little less than 1 tbsp of agave nectar in place of the sugar, used whole wheat flour instead of white, and used flax seed as my egg replacer (1tbsp flax, 1.5tbsp water, processed until a thick mixture), and I accidentally slipped on the vanilla, but they came out amazing!

Good thing I cut the recipe in half because I would have devoured every last one!  This was the best Pancake Tuesday ever!

these are good! i'm not really a pancake person, but i make them cause my husband likes them.  i forgot the egg replacer this week (used EnerG last week) and didn't notice a difference.
