Best Vegan Mac and Cheese in the entire world...seriously
1 1/2 pounds pasta, preferably macaroni "Cheese" Sauce:
1 1/2 cups unsweetened nondairy milk
1 1/2 cups nutritional yeast
1 cup canola or vegetable oil
1 cup water
1/3 cup tamari or soy sauce
1/4 (12 ounce) block firm (not silken) tofu
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon vegesal or in lack of fancy product, just use salt
1 dollop mustard, optional
1. Preheat oven to 350 degrees Fahrenheit. Boil water in a big pot and cook pasta according to package directions.
2. Add all of the "cheese" sauce ingredients in a blender and process until smooth. Once pasta is cooked, drain and put it in the baking pan (about the size of a brownie pan). Pour the "cheese" sauce over the pasta.
3. Bake until the top of the pasta looks slightly browned and crispy, about 15 minutes.
This is very simple and tastes amazing! If you are cooking for yourself, it will last about 5 days if you eat it for all three meals of the day.

This was quite good!! It really cured my craving! I was impressed!
That being said I can understand how some other vegans may not like this recipe.... actually, not THIS recipe in particular, but nutritional yeast mac n cheese in general. It really is an acquired taste, and it can be a bit intimidating to those who still long for traditional non vegan mac n cheese. It might take some getting used to, but eventually you'll learn to love it. :)>>>
I halved the recipe and it was the perfect quantity for one painfully filling dinner and a leftovers lunch. But then again I eat like a horse since I am all that is man. I forgot to add the mustard and it was still great.
LOL... I still need to try this recipe 'by the book'! It's too tempting to fiddle wih any recipe, especially uncheese...... I must refrain, and follow the instructions. And see if this is The Best, Seriously. :P ::)
Hola. I tried this recipe and I found it delicious. Of course, I ate the whole thing in less than 4 days. It was breakfast, lunch, and, sometimes, even dinner. But I have a rather strange and embarrassing question, was your urine a strange color after eating this? I'm truly embarrassed to ask this, but I'm very curious if this happened to anyone else. ???
Yes, my urine looked like the ink from a yellow highlighter..... ;) It went away with some extra water, though. Weird.

TUrned out great! It tastes a lot like the "macaroni and Chreeze" from Road's End, expect better. My husband said it reminded him of smoky, aged cheddar. It is a bit on the salty side, I'm not sure how to fix that, just in case the soy sauce is one of the key ingredients, I wouldn't want to lessen up on it. I know the recipe said to NOT use silken tofu, but it DID say to use firm tofu. I used SILKEN EXTRA FIRM tofu and it turned out fine. Interesting, eh?
This was just as satisfying as mac and cheese yet not offal for you, I put ketchup and tomatos on top which was scrumptious and used rice milk instead of soy, i will make this again
Thank you so much! I just made a 1/2 batch because no one else in my family will touch my vegan food. I think it came out amazing! I didn't have to bake it for very long and its thick, creamy and delicious. It doesn't taste exactly like mac and cheese but its close enough for a vegan. I will make it again and again. :D
I put a little less water, used whole grain mustard and drizzled truffle oil over the top before baking. It is delicious!
This recipe was amazing. My boyfriend and I are new vegans and are very happy to have found this tasy dish. I did change a few things though. I cut down the recipe, added less salt, no water, more soymilk, less oil, more tofu, and some sauted onions. YUMMY! :D
We really liked my version of this. I just dumped things in the blender..and didn't measure anything. I added some onion powder and parsley, cayenne, and black pepper. I only added a tiny bit of oil....and mixed it all with spaghetti and broccoli. I added some bread crumbs to the top, but not very many...so it didn't add a whole lot.
