Black Bean and Brown Lentil Salsa
1 can organic black beans
1 1/2 cups cooked brown lentils (cooked with tomato chunks and finely chopped kale, optional)
1 yellow pepper, chopped
1 red pepper, chopped
1 onion, finely chopped
1-3 jalapenos, finely minced
1 tomato, chopped
finely, chopped kale
Begin by boiling about four cups of water. When it comes to a boil, add about 1 1/2 cups (Organic) Brown Lentils. Cook for 20 minutes, optional add-ins include Chunky Tomatoes and chopped Kale. Let cook another 10 minutes or until Lentils are to your liking. Let cool.
In a separate bowl, mix can of Black Beans with all other ingredients also adding the Lentil mix. Stir, spritz with Lemon, and enjoy!
