Black Bean and Corn Salad

What you need: 

2 (15-ounce) cans black beans, drained and rinsed
1 (15-ounce) can organic sweet kernel corn
1 red bell pepper, diced
1 pepper of your choice, diced
1/2 bunch fresh cilantro leaves, torn from stems
1 cup grape or cherry tomatoes
3 to 4 tablespoons balsamic vinegar
1 to 2 teaspoons dry mustard
1 to 2 tablespoons cumin
salt, to taste

What you do: 

Combine all ingredients in a bowl.

SO HOW'D IT GO?

This is a great recipe, my family really enjoyed it. It's quick and easy to throw together, and the flavors get even better the longer it sits (or as my mom would say, the flavors "marry" well). Thanks for the recipe, it's a great summery salad dish!

I loved this recipe.  It was very easy to throw together.  I added a little fresh lime juice to give it a zing.  It did the trick.
