Black Bean Burgers

What you need:

1 (20 ounce) can black beans, rinsed and drained
1/4 cup yellow onion, diced
1/4 cup red bell pepper, diced
1/2 teaspoon ground cayenne pepper
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1 cup seasoned bread crumbs
2 tablespoons fresh chopped cilantro
2 tablespoons olive oil
salsa, to garnish
alfalfa sprouts, to garnish
guacamole, to garnish

What you do:

1. Preheat oven to 350 degrees F. Grease baking pan. In a large bowl, mash black beans then add onion, bell pepper, cayenne pepper, egg replacer, vegan bread crumbs and cilantro.
2. Blend until all ingredients are mixed well. Form bean mixture into patties and place on prepared pan.
3. Bake for 10 minutes. Alternatively, fry them in olive oil. I recommend baking them. Serve with garnishes, if desired.

SO HOW'D IT GO?

These were delicious! I made mine much flatter then the ones in the picture, but they turned out great.  They have a great flavor and make a great alternative to the store bought meat substitutes.

I made these burgers for dinner tonight w/a side of the "Spicy fries" recipe also on this site. I used green pepper instead of red because I just happened to have it on hand. I baked the burgers according to the recipe. I topped my 2 burgers w/broccoli sprouts and mild salsa. My husband put sprouts and ketchup & mustard on his. I think that they were a little smushy in the middle, but my husband said they were perfect. Maybe next time I won't make them so thick.

These turned out great. We baked them and then grilled them on our George Foreman grill. Next time, I'd only use a little cilantro -- I think the taste was a little too overpowering. Otherwise, delicious and really nice texture.
