Black Bean Burgers

What you need: 

3 (16 ounce) cans black beans, rinsed and drained
1 1/2 cups uncooked regular oats
1 medium onion, chopped
2 jalapeno peppers, seeded and chopped finely
2 cloves garlic, minced
3/4 cup fresh cilantro, roughly chopped
1/4 cup applesauce
1 teaspoon salt
1/4 cup flour
1/4 cup cornmeal
vegetable oil

What you do: 

1. Coarsely mash beans with a fork. Combine beans and next 7 ingredients (through salt). Shape into 8 patties.
2. Stir together flour and cornmeal and dredge patties in mixture.
3. Cook patties in hot oil in a large non-stick skillet over medium-high heat until each side is lightly browned. Drain on paper towels.

SO HOW'D IT GO?

I have made these many times over the last 6 months. They taste great and are easy to make.  At the start of the week, I make the recipe up and then leave the unformed patties in the refrigerator.  That way my husband or I can quickly form one or two burgers to make for lunch or dinner throughout the week.  We have also had luck baking these instead of frying for an oil-free version, although this ends up with a slightly drier burger (although still delicious).  Just a tip for those of us who aren’t afraid to get our hands dirty: instead of mashing the beans with a fork, mix them in with the other ingredients and mash/squeeze the entire mixture with your hands. I find that this is a much easier way to get a cohesive burger.
