Black Bean Soup

What you need: 

1 teaspoon olive oil
1 clove chopped garlic
1 teaspoon ground cumin
pinch of black pepper
1 can vegetable broth
1 can black beans
1 can whole kernel corn
1 can tomato soup

What you do: 

Heat oil in large pot over medium high heat and saute garlic, add cumin and black pepper. Stir in vegetable broth, can of corn, and 1/2 can of black beans. Bring to a boil. Meanwhile, in a food processor or blender, process remaining 1/2 can of black beans and can of tomato soup until smooth. Stir it into boiling soup mixture and reduce heat to medium, and simmer 10-15 minutes.
Since I only cook for myself, I have half of this for lunch or dinner one day, and then keep the leftover in the fridge and have it for the next day. This is one of my favorites.
