Black Beans and Rice
1 cup cooked rice
1/2 any color bell pepper (I use yellow)
4 cloves fresh garlic
1/2 cup cooked black beans
1/2 cup cooked black eyed peas
1 cup turnip greens
Juice of 1 lime
1 1/2 teaspoon dark chile powder
1 - 1 1/2 teaspoon salt (or to your own taste)
1/2 cup vegan butter (I use Earth Balance)
1 tablespoon Oregano (dry or fresh)
1. In a good sized pot, melt butter and saute garlic and onions until they barely become tender. Roughly chop the bell pepper and add to the pot.
2. Add your beans, peas, turnip greens, and all seasonings, and cook until bell peppers are barely tender.
3. Add rice and gently fold it into the rest of the lot, so as not to make a mush of your meal.
This can go along side with some Wonton Tacos!!!!! OWWW!!
The cook time is 1 hour because of the boiling of the beans
