Black Beans with Mushrooms

What you need: 

1 onion, chopped
1 green bell pepper, chopped
1 package fresh mushrooms
2 cans black beans, drained and rinsed
a little olive oil
a little red wine vinegar

What you do: 

Saute the onions, peppers, and mushrooms in the olive oil. Turn the heat down to medium low and add the black beans until they are warm, and add a sprinkle of vegan red wine vinegar... its as easy as that! Its also great served over rice.

SO HOW'D IT GO?

easy and very tasty! I added 4 cloves of garlic, some paprika and oregano. Used 1 can black beans and 1 can canellini beans, 1 8-oz pkg of white mushrooms. Didn't have any red wine vinegar.

I finished off the leftovers, and for some reason, it was a little more bland today, but I jazzed it up with some salt, and it came back to life. Definitely making this one again.

I just had this tonight. It was reeeeeaaallllllyyyy good :) I served it over quinoa, instead of the suggested rice (first time having quinoa too!). I thought it was great just as it was, my ovo-lacto vegetarian fiancee thought it tasted better with some grated cheese on it. I will definitely be making this again!

fast, simple and good-  I ate it wrapped in a tortilla and added some chopped raw tomatoes.  i'd make it again for a quick & easy meal.

The leftovers make excellent sandwiches...mash the beans a bit and maybe a little vegan mayo...lovely on wholegrain bread.

Simple, inexpensive and tasty--my three favourite ingredients! Is it possible to have too many black bean recipes? I think not! I boil my own presoaked beans, so just calculate however many you need to serve.

this was Good (with the capital G)!
I used red bell pepper and cooked (not canned) red beans but i don't think that it really made any significant difference.
so i ended up using 1lb of beans and about 14 button mushrooms.
oh, i also added about 1 teaspoon of ground cumin to the heated oil 10 seconds before adding everything else just because i think it goes really well with bell pepper and beans.
