Black-eyed Peas, Cucumber, Tomato, Cilantro Salad

What you need: 

1 1/2 cup black eyed peas, dried
1 cucumber, peeled, seeded, diced
2 tomatoes, diced
1 serrano chille, seeded, diced
1/2 cup cilantro, chopped
1 lemon and/or lime
salt and pepper

What you do: 

Combine 1.5 cup dried black eyed peas and 3 cup water w/ pinch of salt. cover & bring to a boil, reduce to simmer, simmer with lid cracked 15-20min until tender but with a little bite. Drain and run under cold water.
Combine cucumber, tomato, serrano, cilantro. Salt & Pepper to taste. Add lemon/lime juice. Let sit for at least 20 minutes. The longer the better.
I added some small avocado chucks to mine. You can also use vinegar or salad dressing to substitute for lemon/lime juice.

amazing!! i just left the serrano out, sorry i cant stand anything spicy!!

This is a nice little salad with a bite.  I will make just about anything that has cilantro, lime, and hot peppers in it, and I love using serrano peppers because they have the same basic flavor of a jalapeño, but they're hotter! 
While chopping the veggies up I discovered that my cucumber had gone spongy, so I just left it out.  I added a bunch of sliced green onions, the juice (and zest) of two limes, and drizzled a bit of olive oil over it as well.  I let it sit several hours so all the flavors could blend and added the optional avocado right before serving.
