"Blackies" (Black Bean Brownies)

What you need: 

1 (15 1/2ounce) can black beans, rinsed and drained
3 egg replacers (I used 3/4 cup applesauce + 1 1/2 teaspoons baking powder)
3 tablespoons vegetable oil (I used canola)
1/4 cup cocoa powder
pinch salt
1 teaspoon vanilla extract
3/4 cup vegan sugar
1 teaspoon instant coffee or mint extract, to taste, optional
1/2 cup vegan chocolate chips, optional, but highly recommended
cayenne pepper, to taste, optional (don't use if using mint, but otherwise highly recommended)

What you do: 

1. Preheat oven to 350 degrees F. Grease 8x8" pan.
2. Blend everything together in your blender, and then pour into prepared pan.
3. Bake for 30 minutes or until the top is dry and the edges pull away from the side of the pan.
These are extremely gooey; keep this in mind! You can't taste the beans at all, and I practically ate the whole pan myself, they were so good. Try them; you'll be glad you did!

SO HOW'D IT GO?

I was excite for this recipe but somehow it totally bombed for me. It never set up after quite a long time in the oven (at least a few hours 45 mins at a time or so) and then mine tasted so much like black beans I couldn't eat it.... I followed the recipe exactly, don't know what happened.

Made these with soaked and pureed dates instead of sugar.  I think that the sticky dates and some added "flax eggs" helped bind everything together a bit better.

Just had to make these because of the strangeness factor, but everyone was VERY pleasantly surprised so far.  The carnivorous neighbors ate a whole batch in ten minutes flat. Now I am baking a second batch for my students, and I have a feeling a third batch for family this weekend.  I cannot believe how perfect these are--especially if you blend the beans completely, and no 'bean skin' can be detected. I used agave for the sweetness and applesauce plus baking powder for egg replacer. THANK YOU for this recipe!!!

Ok I used some banana for the egg replacer, i guess that wasn't a good idea cause it tasted alot like banana, but also it was really runny and not good at all. These are definitely not for me  :-\

I have made these several times, and they are so wonderful.  I made them for my family over Christmas and they were impressed by them as well.  I like alittle coffee grounds in them, but this time I didn't have any so I added a bit of cinnamon to them, that is great too.  I do add 2 tsp. of baking powder to them to get them more cakey.  I cannot eat wheat any more and also need to eat tons of protein to keep my weight up and I am a brownie addict, so when I found this recipe and it turned out so great I was the happiest girl in the world.  Thank you for posting it.

If you like bean used in a sweet setting you may find this recipe to be okay, they really do taste strongly of the beans though.
I usually like beans used in sweets and even I didn't want to eat more than a few bites, I threw away the pan and  I wouldn't make these again.

Mmmmm these are very good! I had no problem baking these, and they sat up just right. I did get a bit of a 'bean' after taste, but that really didnt bother me.  Thanks very much for the recipe!

AMAZING!  i love it!  didn't use the coffee or mint, but did use the cayenne pepper and it added a fantastic taste!  non-vegan friends enjoyed it as well!

i was really excited about making these but i also ended up with a pan full of pudding. its tasted great though.

I made them for my Mom who does not eat gluten. This recipe was a nice alternative to rice flour (which is what we normally use when baking).

I was so scared that I would have ended up with a pan of pudding --but no! They turned out super moist, yet very cake-y. Oh, and I didn't have any black beans, so I used red kidney beans instead, and they taste fine to me.
