Blueberry-Banana Pancakes

What you need: 

1 cup gluten free flour mix (I used 2 parts gluten free oat flour, 2 parts brown rice flour, 1 part buckwheat flour and 1 part flax meal)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup non dairy milk (I use almond)
1 tablespoon flax meal
3 tablespoons water
2 tablespoons safflower oil
1/4 teaspoon vanilla
1/4 cup blueberry puree
sliced bananas

What you do: 

1. Combine dry ingredients in large bowl. Set aside.
2. Make flax egg by whisking flax meal and water. Mix together milk, oil, flax egg and vanilla. Mix into dry ingredients.
3. Fold in blueberry puree. Spoon onto frying pan. Place thinly sliced banana on each cake. Cook until golden brown.

Source of recipe: We've been eyeing this recipe on www.neverhomemaker.com for a while now and finally got around to making these pancakes. The only things we changed were the addition of the bananas and the vanilla and we took away half the blueberry puree to give it a more subtle flavor and make way for the banana! We also made it gluten-free of course by using a flour mix. We were so impressed. They tasted like sunday morning.

SO HOW'D IT GO?

This was delicious and easy to make. Its not easy trying to find good gluten free AND vegan recipes. For the flour I used 3 parts gf oat flour, 1 part almond meal and 1 part brown rice flour. Instead of 1/4 cup blueberry puree, I used 1/2 cup mashed banana and strawberries. I cooked them in coconut oil in the frying pan and they were DELICIOUS! This recipe was just enough for me, so if you are making it for more than one person then you should double or triple the recipe.
