Blueberry Muffins with Crumb Topping

What you need: 

[u]Muffins[/u]:
1 egg equivalent, prepared (e.g., Ener-G Egg Replacer)
1-1/2 cups flour
3/4 cup vegan sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup vegetable oil
1 Ener-G Egg Replacer
1/3 cup nondairy milk
1 cup blueberries [u]Crumb Topping[/u]:
1/4 cup sugar
1/8 heaping cup flour
2 tablespoons vegan margarine
3/4 teaspoons cinnamon

What you do: 

1. Preheat the oven to 400 degrees F (200C). Grease 12 muffin cups. Prepare egg replacer; set aside.
2. Combine flour, sugar, baking powder, and salt.
3. To a 1 cup measuring cup, add the vegetable oil and egg equivalent, then add enough nondairy milk to equal one cup. Add to dry ingredients and mix well. Fold in blueberries, then place the batter into the greased muffin tin.
4. Crumb topping: Mix sugar, flour (overfill the 1/8 cup), margarine, and cinnamon until any large lumps are worked out. Sprinkle topping over muffin batter before baking.
5. Bake about 25 minutes, until the topping and the tops of the muffins are golden.

could i make these using frozen blueberries or would they release too much moisture?  anyone try it yet?

These muffins were awesome! I substituted dried cranberries and orange zest for the blueberries because I'm allergic.  :'( But they were still great! I also used half ww flour and white flour. Next time I'm going to try and omit half the oil and use apple sauce.

these are really good!  it's definitely impossible to stop at one.  my only complaint is that the texture seems more like cupcakes than muffins, but i'm not saying thats a bad thing.  i was just expecting something a little different.

These were great! We did not have any blueberries, so we subbed in some rasberries and blackberries. We also used whole wheat pastry flour and flax for the eggs. I might try making them with agave nectar and apple sauce instead of oil because I have ate them all day. One here, one there. ;)

These are the best.  I make them with whatever I have on hand, not just blueberries.  They're even good plain, with spices like cinnamon and nutmeg thrown in the batter.

these muffins were amazing!!!  i used only ww flour, added oatmeal, used mixed berries, and used oats in the topping also.  simple, not too sweet, and fluffy wonderful muffins!  thanks

These were fantastic!!!  Light and fluffy, the perfect muffin!  I added oats to the batter and topping, delish!

I've just gotta comment again, I brought these in to my intro to baking class and my chef instructor wouldn't believe they were vegan! He asked for the recepie. :o
