Blueberry-Zucchini Muffins with a Hint of Banana

What you need: 

1 3/4 cups of flour
2 teaspoons of baking powder
1/2 of a teaspoon of allspice
1/4 of a teaspoon of salt
1/3 of a cup of sugar
1 teaspoon of vanilla extract
1/2 of a banana, mashed
3/4 of a cup of pureed zucchini (about 1 decent-sized one)
1/4 of a cup of unsweetened applesauce
1 cup of fresh blueberries
1 tablespoon of water

What you do: 

Combine dry and wet ingredients separately. Then, mix them together. fold in the blueberries. Spoon into a muffin pan sprayed with cooking spray and bake at 400 degrees Fahrenheit for 15 minutes.
In total there are 1130 calories. therefore, each muffin is about 94 calories. Yay! Healthy food! I must say, excellent warm with a wee bit of soy margarine or other butter-like substance.

SO HOW'D IT GO?

Mine are baking in the oven right now. However, I made a few mods due to absence of ingredients. I increased the applesauce to 1/2 C to make up for the missing half banana, and since I didn't have allspice I used 1/8 t nutmeg, 1/8 t cinnamon. Also, instead of pureeing the zucchini, I shredded it finely. Not only that, but since vegellicious mentioned his/hers was gummy, I added 1/2 T ground flax seeds mixed with 1.5 T water. However, they could have been gummy due to not being baked enough. I'm trying  a longer cook time. Oh, I also added a splash of lemon juice and subbed almond extract for vanilla because that is what I prefer. Great base for a recipe though! I am very excited and can not wait for them to come out of the oven!
