Bombastic Brazil Nut Cookies

What you need: 

8 tablespoons vegan margarine, softened
3/4 cup brown sugar
substitute for 1 egg (Ener-G works great)
1 teaspoon vanilla extract
1 tablespoon soy milk
3/4 cup all-purpose flour
1 heaping cup rolled oats
1 teaspoon baking soda
pinch of salt
1/4 cup chopped Brazil nuts
1 cup vegan chocolate chips or 3/4 cup raisins

What you do: 

Whisk together butter, sugar, egg substitute, vanilla, and milk until fluffy. Can be done by hand or food processor.
Mix flour, oats, baking soda, and salt in separate bowl.
Stir together wet and dry ingredients. Fold in nuts and chocolate chips/raisins.
Preheat oven to 350Fahrenheit. Cover bowl and chill in fridge for 30 minutes.
Grease baking sheet or cover with parchment paper. Drop about 30 (my batter only made 20...) spoonfuls onto baking sheet and flatten slightly.
Bake for 15 minutes until golden brown.
