Breakfast Cookies

What you need: 

3 cups oats
2 medium bananas
just under 1/3 cup olive oil
1/3 tsp salt or to taste
1/3 to 1/2 cup dates (pitted)
2/3 cup toasted almonds or any other nut you like (optional)
2/3 cup carob chips (optional)

What you do: 

1. Mix oats and salt. Add olive oil and mix well.2. In a blender, mix bananas and dates until well blended and smooth. You can add a little brown rice syrup or maple syrup if you want them sweet.3. Add banana mixture to the oats and blend well. Add nuts and carob if you like. Let stand for half an hour.4. On an ungreased cookie sheet, form cookies (they will not spread or change at all with baking, so make them nice!) ;)5. Bake in a preheated 350 degree oven for 12-15 min.
Can make about 24 cookies, unless a bigger cookie is desired.

These were pretty good! I used sunflower seeds as the nut, and added dried cranberries. Next time I think I'll leave out the carob chips and add some more dried fruits.... the banana/date mix makes it really fruity to begin with and it doesn't suit the chocolatey taste in my opinion. As for the times when you have to eat at home with the family I recommend you helping your parents cook dinner a vegan way, or maybe cook a delicious vegan side dish/dessert and hopefully they will ease into your vegan ways. Try to tell them your reasons for being vegan and letting you make something vegan to share with them.
