Broccoli and Carrot Salad with Almonds

What you need: 

2 large carrots, sliced into thin coins
1 head broccoli, chopped to florets
1 tablespoon vinegar
2 teaspoons mustard
1 teaspoon sugar
salt and pepper, to taste
1/3 cup sliced almonds, toasted

What you do: 

1. Bring a large pot of water to boil. Throw carrots in boiling water and cook for 2 minutes (no longer). Remove them with skimmer and keep the water boiling.
2. Now add broccoli florets and cook 2 minutes (no longer). Remove and rinse with ice-cold water to stop cooking. Combine vinegar, mustard, sugar, and salt and pepper.
3. Mix vegetables in a large bowl and cover with dressing. Toss in sliced almonds and serve.

this salad is simply awesome. Thanks Keda. Only, instead of boiling, i microwaved on high for 2 minutes.

I love this recipe! This time I left out the sugar, added some olive oil, sesame seeds, some Mrs. Dash, and some raisins. I never have sliced almonds and our whole ones are raw - I think it's perfect! It's pretty to look at and wonderful to eat.

This recipe was so flavorful, my mouth actually started watering after I took my first bite!  Just like many others I also steamed my veggies, the overall turnout was fantastic!

i just made this, it was fantastic! the only differences in the salad i just whipped up is that i put cauliflower in the mix as well, i used balsamic vinegar, i steamed the veggies, and i didn't use salt or pepper. it was still delicious, though. :D

Keda, this salad is delicious. The only difference was that I steamed the broccoli & carrots instead of boiling them to keep the colours more vibrant.
