Broccoli "Cheese" and Potato Soup
2 Yukon gold potatoes, chopped into cubes
1-2 heads of broccoli florets, chopped in half
3 large carrots
1 package of "Chreese" in cheddar flavor or 1/4 cup nutritional yeast
3 cloves garlic, minced
Salt and pepper and various herbs of choice, if desired
1 carton of Imagine Potato Leek Soup
1-2 cups soy milk or other dairy substitute
1/2 yellow or white onion, chopped
1/2 large shallot, chopped
In a large pot combine shallots onion and garlic. Sautee for 2 minutes with a splash of olive oil.
Add potatoes and "sweat" with the lid on over medium heat for 10 minutes to soften.
While softening, in a blender or processor combine carrots, 1 cup soup and either "Chreese" or nutritional yeast, and blend until liquefied. Add this to the pot with the remaining soup and the broccoli.
Add soymilk as needed to desired consistency.
Simmer on medium low until potatoes are soft. Check flavor and add more "Chreese" packets or nutritional yeast if desired.
