Broiled Snowpeas, Mushrooms, and Tomato with Onions

What you need: 

8 ounces button mushrooms, quartered
1/2 cup snow peas, strings removed
2 roma tomatoes, roughly chopped
1/2 cup onion, roughly chopped
2 teaspoons olive oil
1/4 teaspoon salt
pepper, to taste

What you do: 

1. Preheat broiler. Throw all vegetables together in a 13" by 9" pan, or similar size.
2. Add the olive oil and salt and pepper to the veggie mix. Stir to coat the veggies well.
3. Broil for about 5 minutes, stirring frequently for even cooking and to prevent burning.
I like to serve this over rice, couscous, or thin pasta. You could also serve with tofu cooked any way you like it, or if you are lazy like me, a vegan chicken style patty or nuggets. Of course, this is really good by itself too. Fast and very healthy.
