Brown Rice Pilaf

What you need: 

1 cup brown basmati rice, rinsed
2 cups water
1 small onion, diced
1 stick celery, thinly sliced
3 cloves garlic, minced
1 inch ginger, minced
1 tablespoon canola or peanut oil
1/2 cup peas or edamame
1/4 cup raisins
3 tablespoons curry powder (LaLah is the best!)
1 teaspoon salt
1 tablespoon toasted sesame seeds
1/2 cup toasted almond flakes

What you do: 

1) Prepare rice by bring rice and water to a boil and then reduce heat to low. Simmer for 30 minutes until water is absorbed.
2) In a non-stick wok, stir fry onion, celery, garlic, and ginger in oil until soft and slightly browned. Add peas/edamame and warm through. Add curry and salt and stir fry another 30 seconds. Add a little more oil and follow with cooked rice; stir fry for a minute or two. Remove from heat and stir in sesame seeds and almonds.
