Brownies

What you need: 

2 cups flour (I use enriched and whole wheat), divided
1 cup water
1 cup brown sugar
1 cup granulated sugar
1 teaspoon salt
1 teaspoon vanilla extract
3/4 cup baking cocoa
1/2 cup vegetable oil
1/2 teaspoon baking powder
1/2 cup chopped nuts, optional
1/2 cup vegan chocolate chips, optional

What you do: 

1. Preheat oven to 350 degrees F, and grease an 11x7" pan. Boil water and 1/2 cup of the flour over low heat, stirring constantly, until it reaches the consistency of a thin gluey paste. Remove from heat and let cool completely.
2. Mix vegan brown sugar, granulated sugar, salt, vanilla, cocoa and oil. Then add the flour and water mixture. Mix well.
3. Add the remaining 1 1/2 cups flour, baking powder, nuts, and chocolate chips.
4. Spread mixture into prepared pan. Bake for 25 minutes, or until a knife can be inserted and come out clean.
This was a really easy, and really tasty recipe. I gave some to my friends and they fell in love with them. They keep asking me to make more. I thought of maybe putting some chocolate frosting on them, but they were perfect without it. Enjoy.'

SO HOW'D IT GO?

When I got to the batter stage, I thought there was no way I was going to pull this recipe off.  I heated up the water and THEN added the flour, which made it an awful, lump-ridden consistency.  When I mixed it in with the cocoa goo and added the extra flour, there was no batter to be seen, and in its place, some greasy dough ball of doom.  I flopped it into a 9x9 baking dish, and tried to force it into the corners, but I was dealing with some terrible elasticity.  At this point, nearing absolute defeat, I threw it into the oven and thought, 'well, it can't get much worse than this!'

45 minutes later, a pan of SERIOUSLY bitchin' brownies came out.

Due to the excess oil, they were SIZZLING.  I might try to cut that down next time.  But, maybe not, as the corners are actually crispy, and I had no idea that anything could be so delicious.

Holy mackeral.  I am on cloud nine.

Following the recipe except for one minor detail (I ended up having to use half melted-margarine/half vegetable oil because I did not have enough oil in the pantry), these brownies turned out fantastic! In the future, I will probably add some sort of topping (such as chopped nuts, dark chocolate chips, or coconut shreds) to make them even more delicious, however add-ins are not necessary. These brownies turned out extremely moist and thick. It seems that the brownies are more flavorful the more you allow them to cool off, and would go great alongside a vegan frozen dessert or fresh fruit!

Thank you very much for this recipe! This was my first time making brownies from scratch, and I am not let down.

I am a recent Vegan convert.  This is the first time I've tried baking without the use of any animal products.  I thought, "How can you make a good cake/cookie/brownie/etc. without using butter or eggs??"  Then, I made these!!  WOW!  I can't believe how good they are. 

First when making (as I always do when baking) I had to sample the batter ... I mean ... that's the first indication if they are going to be any good.  This time an added bonus ... no worrying about raw eggs!!  After getting them ready for the oven, I proceeded to lick the mixing bowl clean.  No washing at my house!!  (Just Kidding)

I tasted one soon after they emerged from the oven and, while they were good ... I couldn't say they were the best.  I packed the rest in a box, wrapped in parchment paper and got them ready for the next day.  When I opened the box at the picnic, the smell was the first thing that reached out and smacked me in the face.  WOW ~~ Chocolaty!!  YUM!!

The taste was no less than divine!  Moist, Chewy, Chocolaty ... I could use a hundred more adjectives and never come close to a valid description!!!  I added the nuts (walnuts), but not the extra chocolate chips.  I'm making these again for a dinner party this weekend, hosted by a brownie connoisseur.  I'm not telling anyone they're Vegan until after they sample!!

These turned out amazing!!  So amazing that the boyfriend and I finished the entire pan in 2 days.  I usually make substitutions to make things a little healthier, but I didn't change this at all.  They were chewy and cakey - the perfect combination.  I added some walnut chips.  Next time, I might sub some applesauce or try less sugar.  Really great recipe!

Since this was my first time trying brownies, at first I was shocked about what quantities of sugar the recipe was asking for. I've never put so many sugar in any recipe before.. BUT I decided to be brave and followed the recipe quite precisely and at the end found myself in sweet heaven/ healths hell !!  :D This was soooo good, and my bf as well declared that this was he best dessert he's ever had!  ^-^ A true chocolate heaven!  :)>>>

This is the best brownie recipe I've ever come across period.  The only thing I do sometimes is add cherries (the fresh ones not marichino), or this time I added slivered almonds and shredded coconut! Thanks for this recipe, I will hold on to this one forever.

Thank you for this recipe!!  First vegan brownies that I have ever had turn out and I have tried tons of different recipes :)>>>

I made them with Bob's gluten free flour mix because my little girl is allergic to wheat.  I also used earth balance for the oil because I only had olive oil.

This recipe is really impressing. I would love to give some extra stars for not including any industrially produced omni ingredient replacers, and still having a real brownie texture! These are the types of recipes I come to VegWeb for.

I needed a bit of extra water for the wet mixture to take up all the flour, but I might have cooked the water-flour mixture thicker than the recipe called for.  Next time I either cut down on the flour a bit, or add a bit of freshly-brewed coffee for liquid -  I like brownie recipes which have something added for coffee flavour.

I wanted a low-budget experiment, so have not added chocolate chips or nuts, and it is fantastic as it is, but will try with nuts and/or chips next time.

Now all I have to do is find an equally fantastic vegan vanilla ice cream recipe!  >:D
