Brownies

What you need: 

2 cups flour (I use enriched and whole wheat), divided
1 cup water
1 cup brown sugar
1 cup granulated sugar
1 teaspoon salt
1 teaspoon vanilla extract
3/4 cup baking cocoa
1/2 cup vegetable oil
1/2 teaspoon baking powder
1/2 cup chopped nuts, optional
1/2 cup vegan chocolate chips, optional

What you do: 

1. Preheat oven to 350 degrees F, and grease an 11x7" pan. Boil water and 1/2 cup of the flour over low heat, stirring constantly, until it reaches the consistency of a thin gluey paste. Remove from heat and let cool completely.
2. Mix vegan brown sugar, granulated sugar, salt, vanilla, cocoa and oil. Then add the flour and water mixture. Mix well.
3. Add the remaining 1 1/2 cups flour, baking powder, nuts, and chocolate chips.
4. Spread mixture into prepared pan. Bake for 25 minutes, or until a knife can be inserted and come out clean.
This was a really easy, and really tasty recipe. I gave some to my friends and they fell in love with them. They keep asking me to make more. I thought of maybe putting some chocolate frosting on them, but they were perfect without it. Enjoy.'

SO HOW'D IT GO?

The first time I made these they were GROSS! they were tough and rubbery. but i have tried them twice since then and they were gr8.

they always seem more like a dough and i end up adding about a cup of water.

These are the tastiest vegan brownies I've made! i added crunched up banana chips, and walnuts, and they were delicious. THANKS!

;)b Delicious...I used whole wheat flour and rapadura unrefined/unbleached sugar, which gave the brownies a rich taste instead of a super sugary flavor...I sprinkled some unsweetened shredded coconut on top before I put it in the oven...delish, thanks!

Made these last night and they are going down a storm with my workmates this morning!  I sprinkled the top with chocolate chips before I baked them and frosted them with vanilla buttercream.  They are awesome!

My oven is pretty fierce though and I think next time I'll give them a couple of minutes less cooking time, to make them a bit softer.

Wow. These actually came out quite nice! They're definitely as moist and fudgy as the others said. 

I needed a recipe for a potluck my coworkers and I are throwing tomorrow and I thought earlier "What the heck. I'll just bring some brownies." So glad I did.  :D  I was skepical at first because my baking skills aren't that great.  Most of my brownies were either burnt or rock hard.

I didn't use cocoa powder at all and just melted one cup of chocolate chips for the recipe and added no extra chocolate.  Still turned out great and chocolatey.  I'm going to cut them up and show them off tomorrow.

These brownies are great! My non-veg friend said they were the best brownies he'd ever had. I also really like that it uses veg oil instead of margerine, which usually has soy in it (allergy).
Here are my tips:
add the flour to the water before you turn the heat on, and give it a few turns of a whisk which gets the lumps out.
I don't have the correct pan size, so I use an 8" square, and turn the oven temp down to 335 degrees. I think the baking time is between 40-50 minutes. I'm making them right now!

These brownies ARE very good, but I thought there was way too much sugar stated on the recipe. Instead of the 2 cups suggested, I used about 1 1/4 cup and I still found the end result a bit too sweet. Other than that, it was perfect - gooey, moist and wonderful. Amazing, really, considering I used 2 cups wholewheat flour (and usually baked stuff with wholewheat flour come out like crap) and I am also a crap baker... but you can't go wrong with this recipe. =) 1 cup less sugar than called for would be good though.

AH-MAY-ZING! I was VERY skeptical, but these brownies are awesome. I subbed 1/2 cup of the flour with whole wheat flour, and added dark chocolate chips and pressed walnuts into the top of the pan. YUMMY! SO much better than Duncan Hines!(eww)  ;)b

These are the best!!! In the past when making vegan brownies I ended up with cake-like textures, but not with these.  Perfectly chewy around the edges and fudgey in the center just like my mom makes, only vegan!!! 8)
