Buffalo Kale Chips

What you need: 

3 large handfuls kale, destemmed, and deribbed
cooking spray, as needed
1 to 3 tablespoons hot sauce, to taste
sea salt and pepper, to taste
chili powder, to taste, optional

What you do: 

1. Preheat oven to 350 degrees F. Make sure kale is dry. Spread kale on cookie sheet and lightly spray kale with cooking spray.
2. Sprinkle kale with hot sauce and lightly toss. Add salt, pepper, and chili powder, if using. Toss.
3. Bake for 15-17 minutes, depending on desired crispy-ness.
Source of recipe: I came up w/ this recipe when I went on a diet and had to cut potato chips out of my diet!

I just made these with 1.5 cups kale which was all I had left and figured it was close enough to 3 handfuls. I luckily checked on them earlier than the time I set (17 mins---I checked at 14 mins) because I was smelling them...and they were really done, but still good. I used a tablespoon of buffalo wing sauce and that was more than enough sodium for me...couldn't imagine adding anymore salt. And good thing I didn't add any additional pepper-way spicy, but still good, just a shock... all in all I would make these again but adjust some things...
