Buffalo Style Soy Curls
1 cup dry soy curls
1 cup boiling vegetarian chick'n broth
3-4 tablespoons hot sauce
4-6 tablespoons vegan butter
2 tablespoons olive oil
1. Place your soy curls and broth in a bowl and give it a good stir. Allow soy curls to rehydrate for about 10 minutes. Stir once during re-hydration time.
2. Meanwhile, over medium-low heat, make your buffalo sauce by mixing the hot sauce and vegan butter in a small pan. You can adjust the sauce to taste by adding more hot sauce for more heat and more vegan butter for less.
3. Drain your soy curls and gently press out some of the excess broth. Add them to your pan with the sauce and cook on medium heat until all of the liquid is absorbed (about 5 minutes).
4. Drizzle in the oil and fry the soy curls until they are turning golden brown on at least one side (about 5 minutes or so). Chow down!
Source of recipe: I was craving vegan hot wings but didn't have a lot of time, so I experimented with my new favorite food: soy curls, and this is the end result. This recipe is easily doubled. You can find soy curls at many health food stores or buy them online. Enjoy!
