Butternut Squash Apple Potato Soup (It's a delicious mouthful!)

What you need: 

16 oz. butternut squash, peeled, seeded, cut up
3 med. green apples, peeled, cored, chopped coarsely
2 (10 1/2 oz.) cans veggie broth
1 Yukon Gold potato, chopped
3 slices of your favorite bread, torn in pieces
salt, pepper, rosemary, and marjoram to taste
a bit of soy creamer, to thicken the soup
chopped parsley, to garnish

What you do: 

My mother's homemade recipe with substituting vegan ingredients.
Combine all ingredients in pot on stove top. Bring to a boil, then reduce heat and simmer uncovered for about 45 minutes.
Cool, then put in blender until smooth.
When ready to serve, heat again. Add a swirl of soy creamer after you transfer the soup to the serving bowls. Garnish with some chopped parsley, serve and enjoy!

I doubled this recipe so that I could have soup at work during the week. 
Thank you for getting back to me so quickly Llorona_the_killer. In the end, I didn't end up putting the bread slices in the soup but I will the next time I make it.

i didn't care for this too much but the rest of the household liked it. i used an accorn squash. not sure if that messed things up. the soup was too sweet for my tastes.

Acorn squash has a lighter and more delicate flavor to the butternut squash. Try it again with the butternut and you'll get a less sweet result.

CW, I would think that an average sized Butternut would do fine.

I haven't made this soup in a while & I just happen to have some lovely squash on my counter.  ^-^

...Is the weight of the squash pre-cooked, before peeling and seeding? or, is there an approximate quantity (in cups or likewise) of squash "meat" to go by?

This soup is fantabulous! I added onions and kept the apple cubed and unblended because I like chunks in my soup. My husband just about fell over when he tasted it.

I absolutely love any type of winter squash & always seem to have at least 3 different kinds at any given time. And who doesn't love a hearty bowl of soup during a blizzard?  ;) This recipe is quick & easy to prepare. I used 1 tsp of Rosemary & 1/2 tsp of Marjoram. Also, I sauteed one chopped onion because I love onions & use them in almost everything.
I doubled this recipe so that I could have soup at work during the week.

I'm so glad you liked it!  My mother likes to add onions to it, too, but I'm a bit biased against them, lol.  Glad it worked out great.

I am cooking this soup & I have a question for the poster of this recipe...or any one else that may know. What is the purpose of the bread slices? I add it to the broth & cook it along with the other ingredients?
Thanx for your help.

I just added this recipe to my recipe box & am hoping that I have time this weekend to make this soup. It sounds wonderful. I'll be back..... ;)
