Cabbage and Noodle Melt

What you need: 

2 onions, sliced
3 garlic cloves, minced
2 tablespoons vegetable Oil
2 green bell peppers
1 head cabbage
1/2 teaspoon paprika
1/4 cup soy sauce
2 cups cooked noodles
1/3 cup margarine
1 cup vegan parmesan (or 1/2-1 cup nutritional yeast)

What you do: 

1. Saute onions and garlic in vegetable oil until onions are soft. Add peppers and saute 4 more minutes.
2. Add cabbage and seasonings, reduce heat to love, cover and cook until cabbage is soft. Stir in noodles, mixing well. Pour into serving bowl.
3. Melt vegan margarine and parmesan/nutritional yeast in small saucepan. Pour over cabbage and noodles.

SO HOW'D IT GO?

I thought this was pretty good. I used red pepper instead of green, didn't use as much EB, and added water to my sauce to make it..saucier. Next time I think I'll use more soy sauce (I didn't have much), more seasonings, and more sauce. I mixed everything up and sprinkled some "parm" on top. Thanks! : )

This was surprisingly good.  I didn't think that I liked cabbage, but I guess I do.  I used vegan butter and nutritional yeast as a topping.  It turned out good.  Thanks for the recipie.

Sounds wonderful, though it made me laugh because where I come from a "melt" is a sandwich on rye with melted cheese, so I was thinking "Cabbage and noodle sandwich??" I will try this the next time I get a cabbage!
