Cabbage & Potato Curry

What you need: 

1/2 small cabbage, shredded
2 new potatoes, unpeeled
1/2 small onion, finely chopped
caraway seeds, to taste
1-2 tablespoons curry powder
1 cup grated carrots
salt and pepper, to taste

What you do: 

1. Microwave potatoes whole until done (two-three minutes per potato) Cube potatoes. Saute onion in a tablespoon of canola oil.
2. Add caraway seeds. Mix curry powder with enough water to make a paste add to pan. Add cubed potatoes, shredded cabbage and carrots.
3. Add about 1/2 cup water and salt and pepper. Cook until cabbage and carrots are just done and not mushy. Serve immediately on bed of rice.'

SO HOW'D IT GO?

Like others, I used this awesome and simple recipe but varied the spices a bit according to taste.  Here's what I came up with:

1/2 small green cabbage, cored and diced/shredded
1 large Yukon gold potato, diced
1/2 cup frozen peas
1 veg sausage, halved and sliced
2 Tbsp curry powder
1 tsp mustard seeds
1/2 tsp dried cilantro (2-3 stalks fresh)
1/4 tsp cumin
garlic salt to taste (couple shakes)
4 green chilies, diced w/ half of seeds

I sauteed the potatoes, chilies, and sausage together for a few minutes in canola oil, then pretty much followed the recipe above after that, making the spices into a paste, stirring everything together and cooking covered on medium heat until done.  It was sooooooooooooo CRAZY good!  :D

We will be making this again often!  Thanks for the recipe and inspiration!

Very Good!
Although I have to admit, I changed this recipe...a lot.
It just needed a little pizazz and I was feeling creative...
So I used a whole head of cabbage (a little one), a medium yellow onion, 3 medium red potatoes, half a sweet potato, a can of diced tomatoes, veggie broth instead of water and about 1/4 cup green curry paste instead of yellow.  It doesn't look very pretty, but it was rather delicious.
Next time I'd probably use more or all sweet potato - that was the best part.  I'd also like to try it with the different curry powders.
