Cabbage Rolls with Peanut Sauce

What you need: 

Cabbage rolls:
4-6 ounces rice noodles
2-3 scallions, chopped
1 small red onion, minced
2-3 cloves garlic, minced
1 carrot, shredded
1 lime, juiced
1 small cabbage, leaves removed Peanut sauce:
1/4 cup peanut butter (natural, no added sugar)
1/4 cup hot water
2 tablespoons brown sugar
2 tablespoons soy sauce
1-2 teaspoons hot chili sauce

What you do: 

1. For cabbage rolls, soak noodles in water. Quickly saute all the chopped vegetables in a little bit of water until onions are soft. Add noodles and lime juice, stir and remove from heat.
2. Place a small amount into a cabbage leaf and roll up. This can be done at the table; just set up a plate of cabbage leaves and a bowl of the filling and let everyone make their own rolls.
3. For peanut sauce, mix peanut butter with hot water and stir with fork until well combined. Add vegan sugar, soy sauce, and hot sauce to taste. This is a rather runny sauce, some prefer it thicker. Simply add less water for a thicker sauce.

SO HOW'D IT GO?

Honestly, I was worried about this tasting a little too, uh, healthy.  Or cabbage-y.  But it was really tasty.  Thumbs way up.

It's good as it is, just served up on its own.
