Cabbage Soup

What you need: 

1 large cabbage cut into about 1.5 inch pieces
4 large potatoes peeled and cubed
1 large onion
olive oil
half a pound of small pasta (orzo and ancini pepe work well)
salt and pepper to taste
enough water to cover the ingredients when added to the pot

What you do: 

Put a few tablespoons of olive oil in a soup pot and fry until beginning to carmelize...should take about 15 minutes. Add the potatoes and cabbage...cover this with water and season with salt and pepper. Simmer until the potatoes are just tender. Bring the pot to a boil and add the pasta and cook until al dente.
This is basically a rustic dish. Its very good for cold winter nights.
