Cabbage Tacos

What you need: 

4 purple cabbage leaves
4 heaping spoonfuls of jalapeno or red pepper hummus
4 heaping spoonfuls of corn
4 heaping spoonfuls of beans
4 slices of green pepper
8 slices of tomato
8 slices of avocado
sprinkle of shredded lettuce
salsa

What you do: 

1. Peel cabbage leaves off head, trying to minimize tearing.

2. Wash cabbage leaves and plate with open side up.

3. Fill the resulting cabbage “bowls” with hummus, pepper and tomato slices, spoonful of corn and beans, avocado, shredded lettuce and salsa.

4. Fold in half to eat.
