Canadian Chickpeas

What you need: 

2 medium onions red or white
3 cloves of garlic
1 tablespoon olive oil
3 cups cooked chickpeas
1 pack frozen spinach (app. 10 oz) defrosted
1 28 oz can crushed tomatoes
1 cup chopped fresh tomatoes
half red pepper - diced
1 teaspoon paprika
1 teaspoon oregano
juice of 2 lemons - (3 tablespoons)
salt & pepper to taste

What you do: 

Sauté onions and garlic in oil until tender, add red pepper and cook for 2 minutes.
Add chickpeas, spinach, tomatoes, paprika and oregano. Cover and simmer for approx 30 minutes.
Add lemon juice, salt and pepper to taste.
Can be frozen, lovely on jacket potatoes or potato waffles....

A little something to add  ^-^ the flavor really develops if you let it sit in the fridge over night.

This soup was pretty good although it did need quite a bit of salt. It was very filling and I absolutely loved the chickpeas ;)

This was pretty good - a little bland, but I also didn't have any lemon juice, so that may have played a big part....
I added 2 cans of chickpeas, and no fresh tomatoes.  I think I would have liked it better if the spice combination were different.  I ended up drenching it in sriracha......but very healthy since I didn't use the oil - I saute in veggie broth.

This is delicious! I added a little water and put the canned tomatoes in with their juice, because there didn't seem to be much liquid otherwise. Did I miss something? Anyway, this was great. Served with quinoa. Eaten with spork. :)

yum! I love how tangy it is with the lemon and paprika. actually, I only had one lemon, so I put in the juice and the zest. also used collards for spinach. I didn't have a red pepper, I wish I had - next time!

Yum!  This was really tasty!  I used cut up celery instead of spinach, and 'Italian' tomatoes and left out the spices, and it was great!  Reheats very well too.

This turned out really well! I only had one can of chickpeas, but I think it was enough.Serve with a good crusty vegan bread! Yum!

this was really yummy. i didn't have any sort of potato products so i had it on macaroni instead, and it was excellent.

;D I knew it was going to be good, and it was far better than I had imagined. I started the recipe and realized that I had no fresh tomatoes, so I omitted them, and it was DELICIOUS I forgot to make rice and found out this recipe is awesome with taco chips. :D :D :D
