Caras Cabbage Rolls

What you need: 

3/4 of a cup of wild rice - dry
1 1/4 cups of either white or brown rice a mix of the two is also good - dry
1/2 of a cup of soya beans - dry
1 medium carrot grated
3 or 4 cloves of garlic crushed
1 large cooking onion chopped finely (or grated if your eyes can handle it)
1 tablespoon of dried parsley flakes
ground pepper to taste
opptional ingredients for the filling: 1/4 to 1/2 a cup of bell peppers, celery, etc...
a couple heads of cabbage, enough to make pockets for the filling

What you do: 

Filling: Soak your rice and beans, (usually overnight for the wild rice). Cook the wild rice and beans together then add the cooked white/brown rice (it gives better colour to your creation this way). Add the remaining ingredients, don't worry about cooking them before preparing your rolls.
Wash then cook the cabbage leaves until they are done, but not so soft that they will break or tear.
You can now either bake the rolls or freeze them.
Bake them in a casserole dish covered with your favourite tomato sauce, medium to low heat (275-300 F) until they are done (usually for about 20 minutes). They are done when the sauce in bubbling and the filling is hot. If they go into the oven frozen be prepared to wait for about an hour or more.
Serve them up and enjoy.
I like them best with a fresh baked loaf of vegan bread, to soak up the extra sauce.

I also put the TVP in the sauce and add a TBLS of fennel to the rice mixture.

I'm in the process of cooking these right now, but I got more of "Taco" cabbage! How in the world do you get a full leaf off of a cabbage?! Seriously!!  :P

:D Oh man! So good! BUT, I must say that I didn't do beans. I did tvp cooked in tomato sauce and soy sauce, with garlic and onion and shredded carrots and lots of paprika  and black pepper (3 tbs for 1 cup tvp (1 cup before cooked))  So I did TVP and brown rice . Very good!

i was worried this was going to take forever to make but it wasnt so bad and it was def worth it! i made a ton of huge cabbage rolls. i added some tvp that i just cooked in some tomato paste and water to the mix before rolling to up.. i brought a bunch into work today for lunch and even the meat eaters wanted to try them! id never made cabbage rolls before so if anyone else is wondering the easiest way to roll the cabbage leaf is like a burrito.. start at the top of the leaf and do 1 complete roll towards the stem then fold the sides in and continue rolling. yummy!!!

;D These sound excellent - thanks for the recipe. I'm using thai red rice mixed with cranberry beans and kidney beans. I'm also adding more veggies and some spices such as oregano, basil, rosemary, onion powder, and a bit of tumeric. It'll be interesting to see how it turns out :P
