Carob Chip Banana Bread

What you need: 

3 ripe bananas, mashed well
2/3 cup Turbinado sugar
1/3 cup applesauce, "no sugar added"
1 teaspoon vanilla
3 tablespoons oil
1 cup soymilk
2 1/2 cup unbleached white flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/3 cup desiccated coconut, unsweetened (optional)
1 cup vegan carob chips

What you do: 

Preheat oven to 350 degrees F.
Mix together the mashed bananas, sugar, applesauce, vanilla, oil, and soymilk. Set aside.
In a larger bowl, combine the flour, baking powder, cinnamon, and coconut. Add the wet ingredients to the dry and stir until it's just combined. Add the carob chips and stir. Spray a loaf pan with nonstick spray and pour in batter. Bake until toothpick comes out clean, about 50 minutes.
Note: I made both a tray of muffins (6 muffins) and a loaf with this batter.
