Carrot Fries

What you need:

3 large carrots, cut to 3" pieces
2 tablespoons oil (I used sesame)
salt and pepper, to taste
chili powder, optional

What you do:

1. Preheat oven to 375 degrees F. Cut the carrot pieces in half the long way (so they look like fries) with a crinkle cutter.
2. Mix carrots with the oil and set on pan. Sprinkle the salt and pepper on along with chili powder, if using.
3. Put in the oven for15 to 20 minutes.

Preparation Time:
25 minutes
Cooking Time:
Servings:
2 to 4

SO HOW'D IT GO?

I made them without ridges with a plain ol kitchen knife. They were VERY tasty, but beware of making them too salty! I thought I could be generous with the salt due to the carrots' sweetness, but no so!  :o
I have tried similar recipes in the past using parsnips and those are super tasty, too!

Great recipe. I used 1 carrot and some Mrs. Dash as others suggested. They still had some crunch to them but I like crunch so thats no problem.

Thank you for adding this recipe! I don't have a fancy crinkle cutter, but they turn out perfect no matter what shape you cut them. Personally, I add garlic powder in the spice mix and it adds great flavor. I just pulled some out of the oven, so I better get to them before they get cold!

I really enjoyed this!  I used 8 carrots and it was just about right, if maybe a little too much, as a side dish for my family of 5.  The sesame oil is perfect and goes really well with the sweet carrots.  I used only a small dusting of chili powder and some salt to season.  After 10 minutes at 375, they were still really moist and not looking like they would brown up, so I set the oven to 400 and left them in for another 15 minutes.  I think they were perfect after that, just a little brown around the edges and with a very slight smoky taste.  The kids turned up their noses at them even though they love raw carrots, but I think that's just because they were a "new" food.  I thought they were fantastic.

This was so tummy! And I don't really like cooked carrots, but decided to experiment. I ate a whole plate by myself for lunch! Yum-yum! Thanks for sharing :)

These were sooooooooooo good!!!!!!!!!!!! My family loved them. My mom said, "We gotta buy a lot of carrots so you can make these again!!!!" Even my brother and his friend liked it! I added a few more things. I put some adobo, sazon, garlic powder, some salt, and some crushed garlic. Mmmmmmm....! I also tried the recipe with some yuca, because I didn't have any more carrots left.  :'(
But it still came out pretty good! Although I do prefer the carrots. Thanks for a great recipe!

Mmmm...  These are so good!  I used lots of chili powder and added some garlic powder.  This recipe only made one serving though... I mean, I couldn't stop eating them until they were all gone!
