Carrot "Noodle" Salad with Sweet Orange Asian Dressing

What you need: 

2 large carrots
1/2-1 tablespoon hempseed
1/2-1 tablespoon chopped cilantro leaves (optional)
handful or two of salad greens (optional)
Dressing:
1 orange, juiced
1/2 tablespoon agave
1 tablespoon rice vinegar
1 (generous) tablespoon Braggs Liquid Aminos/soy sauce/tamari
1/4 - 1/2 teaspoon sesame oil

What you do: 

1. Peel and shred the carrots. I usually just use the veggie peeler for this to obtain long, wide "noodles". You could also grate the carrots or cut them into thin matchsticks. Toss the carrots with the cilantro.
2. Whisk all of the dressing ingredients together in a small bowl. Pour this over the carrot mixture and toss well. You can allow this to marinate or serve as is. If you are opting for salad greens, arrange the carrot noodle mixture over a bed of greens.

SO HOW'D IT GO?

This was a nice little salad and close enough to raw to suit me!  The little bit of sesame oil definitely kicked it up a notch....I love sesame!  I also added some shredded radish simply because I had some that needed to be used.  Picture to come.
