Carrot Soup

What you need: 

4-6 carrots, chopped coarsely
1 walnut sized piece ginger, chopped coarsely
3 celery stalks, chopped coarsely
1 large onion, chopped coarsely
4 garlic cloves, chopped coarsely
1/2 cup almond butter
1/4 cup nutritional yeast
1 teaspoon curry
1/2 cup orange juice
1 teaspoon sea salt

What you do: 

1. Take first 5 ingredients, (carrots, ginger, celery, onion, garlic), and boil until tender.
2. Put into a processor or blender, with the water, don't drain.
3. Put back into pan and add remaining ingredients, and simmer until heated through. If too thick, add more orange juice to thin, but not too thin.
This is a meal in itself.

This recipe is soooo delicious! Very easy and quick too. I used almond butter per the recipe, but might try the tahini suggestion for a twist. My 19 month old daughter liked it alot. I commented to her about the really pretty orange-yellow color. She looked at it and said "No. Gold!" I think she's right.  ;)b

Or use tahini as a couple of previous posters suggested. This recipe looks good. I'm going to make it this week!

Is almond butter alot different from regular vegan butter?

Yes. Almond butter is made from ground up almonds. If you don't have it and can't find it where you are, another nut butter (maybe peanut butter - though I can't vouch for how it would taste in this recipe) would be a better substitute than vegan butter.

I made this soup last night. My boyfriend was sick and I wanted to make something healthy and hearty. It really did the trick. I didn't have orange juice or ginger, and the flavor was really subtle. The tahini gives it a really interesting taste. I loved it, and will likely be making it again this time with the two missing ingredients. Thanks so much for posting this! So simple and so good!

i made a half recipe but kept the ginger and curry the same and used tahini instead of almond butter like the previous poster.. i also added:

1 small potato
a couple shakes of cinnamon and nutmeg
1/4 teaspoon tumeric
1/4 teaspoon white pepper

and i topped it with sliced green onion  ;)b

it is super delicious ginger-y spiced carrot soup :D thanks!

Just made this soup tonight, subbing tahini for the almond butter. It was wonderful. All the different flavors mix together very subtly. I will definitely make it again... and it was so easy and quick. Thanks for the recipe!
