Carrot Spaghetti

What you need: 

3 medium carrots
1/4 teaspoon salt
3 tablespoons olive oil
freshly ground pepper, to taste
1/4 onion, diced, optional
2 small cloves garlic, finely diced
1/4 cup pasta sauce

What you do: 

1. Wash the carrots well, especially if they are not organic. With a vegetable peeler, peel the carrots into long thing strips and sprinkle with salt.
2. Coat the bottom of a large pan with the olive oil and heat on medium-high heat. When hot, add the carrots. Toss frequently (this works well with tongs). When the carrots start to soften, add the garlic and pepper (add onion here too if you like).
3. Keep tossing for a couple of minutes until some of the carrots get brown around the edges (don't burn!) and the garlic is golden. Serve with your favorite pasta sauce (tomato based, I really can't vouch for alfredo or other fancy sauces).
The nice thing is that it can be twirled with a fork the same way as regular pasta! Great if you're a carrot lover as I am.

SO HOW'D IT GO?

This was quite good, I'm always looking for alternatives to pasta and have definitely found another. I mistakenly used a very sweet sauce, so it was a bit on the sweet side, but the onion+garlic+carrot taste is fantastic.

I wasn't expecting to like this (was never a huge fan of carrots), but it was awesome! I added an extra carrot, some mushrooms, and more sauce, and about twice the amount of garlic. Quick, easy, healthy, delicious, and doesn't dirty up a lot of dishes. What more could you ask for?!  :)>>>

Holy goodness Batman! Wow, this was delicious! I added nearly a whole small sweet onion (finely diced) and used Trader Joe's Organic Tomato Basil Marinara - I can't wait to experiment more next time!
However, I had a hard time with the veggie peeler working very well - 3 carrots just wouldn't cut it. Using a knife didn't give me any better results (worse, in fact). Any suggestions?

i didn't believe in carrots or spaghetti before i made this recipe, now i believe in both.

as a note it is way easier to peel veggies into pasta-shaped pieces than i thought it would be.

Oh man, this is the bomb!
Cheap, as I always have spare carrots lying around (I'm not too big on 'em raw.. too hard to chew)
I added 1 can of fire roasted salt free diced tomatoes (in place of sauce. I hate jarred sauce), 1/4 tsp garlic powder (I'm out of fresh garlic, sadly), some basil, some oregano, and I opted for the onion, as I love onion.
It was perfect for a spontaneous meal. I'm 100% I will be making this a lot for my fiancee and I.
This would go quite dandily with some fresh baked bread, too  ;)

This was surprisingly really good! I doubled the recipe and cut the oil down to 1 TBS and added about 1/2 cup of water to steam cook the carrots. I think this might be good with that lentil pasta sauce on here, to add a bit of protein. Thanks for a great recipe, I'll have to try it in the summer with some zucchini.   ;)b

So I just made this for dinner with a few changes, and let me tell you it was delicious! I'll be making this alot!
Heres my changes:
I added about 3/4 cup of broccoli
only used 2 carrots
used one whole yellow bell pepper
just used a vegan cooking spray for oil
added a bit of parsley and basil
added a bit of lemon juice
and because i didnt want to use pasta sauce(because of the fat content) i just used regular ol tomato sauce

and because i didnt want to dirty up dishes i just added the tomato sauce to the carrot mixture and the sauce heated up quickly

I did carrot and zucchini with marinara and some tofurkey sausage like someone suggested and it was really yummy!!! I gave up pasta so this is a great alternative.

I just made this last night, and it was amazing! My cheeseburger loving, very picky boyfriend even loved it! I also added some cabbage and mushrooms! Thanks for the great recipe! :)>>>
