Carrot Spaghetti

What you need: 

3 medium carrots
1/4 teaspoon salt
3 tablespoons olive oil
freshly ground pepper, to taste
1/4 onion, diced, optional
2 small cloves garlic, finely diced
1/4 cup pasta sauce

What you do: 

1. Wash the carrots well, especially if they are not organic. With a vegetable peeler, peel the carrots into long thing strips and sprinkle with salt.
2. Coat the bottom of a large pan with the olive oil and heat on medium-high heat. When hot, add the carrots. Toss frequently (this works well with tongs). When the carrots start to soften, add the garlic and pepper (add onion here too if you like).
3. Keep tossing for a couple of minutes until some of the carrots get brown around the edges (don't burn!) and the garlic is golden. Serve with your favorite pasta sauce (tomato based, I really can't vouch for alfredo or other fancy sauces).
The nice thing is that it can be twirled with a fork the same way as regular pasta! Great if you're a carrot lover as I am.

SO HOW'D IT GO?

I have a ton of carrots I need to use so this recipe came in handy. I added some zucchini. Made some homemade pasta sauce and added broiled tofu for some protein. It was very tasty. I will definitely make this again.

these are so incredibly good! i can't believe how delicious something so simple can taste. plus, they're much healthier for people who have to avoid grains, wonderful recipe and idea!

oh my gosh!!! Sooo good. I only had one carrot :( so I cut down on everything else but it was sooooo good. And a healthy alternative to pasta. This is def going to become a weekly meal

So much better that regular spaghetti - and I'm a carboholic!
I stole some carrots from my mom's house so I could make it again....I just wish my hubs liked cooked carrots...

I made this on a whim, not expecting too much.  I shaved the carrots and simply threw them in the oven on some parchment paper for a while.  Once they were done I slathered on some sauce.  It was absolutely delicious and so simple.  I make this all the time :)

im from denmark not usa, i wouldnt shop at walmart for ethical reasons. there are few cheap pastas here to eat. I have to go to sweden, but im not going to sweden to get pasta! I think this is a great alternative. Plus carrots grow here so its local. my partner loves this dish and its easy for him to make.

I promise, I wasn't encouraging you to go to Walmart...just trying to state that it's inexpensive and easy to get ahold of  ;)  Pasta was one of the things that ds was most bummed about losing when we found out that we both had celiac, and he loves De Boles.  It's made purely from the grain, so there are no animal products in there, either.  I agree though, this recipe is a yummy alternative!

Have you tried De Boles?  I'm celiac (and on a tight budget), and we use this all the time.  They make rice and corn pasta (certified gluten-free) and it's something like $1.50 a box, we get it at WalMart and Target.  Just wanted to let you know :)

Thanks for this recipe - it looks yummy!  I think ds and I will have to try this over the weekend :)

tasty, very simple and great for me since i cant eat wheat pasta. wheat free pasta is too expensive!!! this works with mushroom and tomato sauces. warm salsa could be okay.

good for any type of carrot, even those strange ones that smell very sour.

Easy to eat, prbably interesting for new vegies and kids.
