Carrots and Nothing Else Cake

What you need: 

1/2 cup canola oil
1/2 cup apple sauce (you can use oil also if you don't want the "lower fat" version)
3 egg replacers (flax seed and Ener-g eggs both work well)
1 1/2 cups sugar
3 cups shredded carrot
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon or pie spice

What you do: 

1. Preheat oven to 350 degrees F. Mix all of the wet ingredients and the sugar in a bowl until well mixed. Add the carrots and mix.
2. In a separate bowl, mix together the dry ingredients. Once both bowls are ready, mix together to form batter.
3. Pour into a 9x13" cake pan. Put into oven for about 40 minutes. It is done when a toothpick comes out clean. If you use other sized pans (rounds, for example) be sure to adjust your baking time.
4. Let cool and enjoy! I just put powered sugar on mine but you can be more creative.
Feel free to also add other goodies, like coconut, walnuts, or whatever sounds good to you.
Source of recipe: This is a modified version of a carrot cake recipe I have. All of the vegan recipes I was finding had other ingredients (pineapple, coconut, etc) in them. I wanted straight up carrot cake. This makes a nice, moist cake. My officemate and carrot cake lover requests this.

The cake turned out great, very moist even after 1 hour in the oven. Almost a bit spongy, but not i a bad way.
I'll post recipe.

I've only tried the Icreadible vegan carrot cake so far, but this afternoon i felt like such a martha stewart, i decided to experiment in the kitchen. What i found was beets, and since i've read quite a few recipes with beets and chocolate i wanted to give it a try.
But none of the recipes i found online did anything for me, so i cem here , et voila: the carrots and nothing else cake became the base of my experiment.
The experiment itself has half an hour or more left in the oven, so i have no idea how it tastes yet...
but here's what i did:

i grated two fairly large raw beets and one carrot to make roughly 3 cups of grated veg.
then i used half white sugar and half maple syrup and molasses (i think that's the proper translatin for what here is a light brown, thick sugary liquid that you use for fudgy-tasting things)
then i used 1 1/2 cup flour and 1/2 cup cocoa-powder

oh, and i have to tell you the easiest thing to do when you're out of applesauce: cut an unpeeled apple into smaller pieces and remove the seeds, then grat them by hand on the fine side of a grater. if you hold the peel-side you wont scratch your fingers and the peel automatically stays out of what becomes a smooth perfect, unsweetened, raw applesauce

Holy cow!

This is amazing, and I'm not even all that crazy about carrot cake to begin with. I am surely going to make this during the holidays. It's perfectly moist and... delicious.



I like it! I used a round pan, whole wheat pastry flour, less oil, a little water, and I made a vanilla buttercream frosting. I baked it for about 40 minutes, and it maybe could have used a bit more baking on the inside..browned on outside though. It's a good carrot cake, bp!


One of the best cakes I've ever tasted! This recipe was so moist, I can't get over it! My whole family loved it - even my boyfriend who is deathly afraid of vegetables and squirmed at "carrot cake" - loved this.


What an awesome recipe!  I followed it exactly except that I added nutmeg as well.  This was my first time making any kind of carrot cake and they were delish.  I made them into cupcakes for a picnic--everyone ate 2!  Next time I will remember to take a picture before I put them in front of everyone.  ;)b  Thanks!

haven't tasted this yet but it smelled and looked wonderful...I am sure it taste as good. :) Worked well for a wedding style cake.


Can someone give me a recipe for the frosting?  I have a birthday party coming up soon, and want something on top.


I have been making this cake a lot lately -- it is super yummy. I especially like mixing in a little coconut.


I made this yesterday for my daughter's birthday and it went over amazingly! I used all whole wheat flour and banana's for the egg's though. Also, for the topping I sprinkled powdered sugar over the top and then covered it with foil which created a nice glaze. This is a must try recipe that is super easy!
